- 8 bone-in, skin-on chicken thighs (About 2 lbs)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 2 tbsp unsalted butter
- 6 cloves garlic (minced)
- 1/2 cup low sodium chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp fresh parsley (chopped, for garnish)
Instructions
- Prepare the chicken: Pat the chicken thighs completely dry with paper towels to ensure a crispy skin. Season with salt, pepper, and garlic powder.
- Sear the thighs: Heat the olive oil in a skillet over medium-high heat. Place the thighs skin-side down and sear until golden brown, about 6-8 minutes. Flip and cook for another 5-6 minutes.
- Create the sauce: Remove the chicken and add butter to the skillet. Once melted, add minced garlic and cook until fragrant. Pour in the chicken broth, scrape the bottom, and simmer for 3-4 minutes.
- Finish the sauce: Stir in the heavy cream and simmer for another 2-3 minutes. Add Parmesan cheese until the sauce is smooth.
- Combine & garnish: Place the chicken back in the skillet and spoon sauce over it. Garnish with parsley and serve immediately.
Notes
You can prepare the sauce in advance. The chicken can also be cooked in an air fryer or baked for different textures.
