- 4 chicken breasts, boneless and skinless
- 2 cups rice, long-grain white or jasmine
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1/2 cup mayonnaise
- 1 tablespoon Sriracha (or to taste)
- 2 green onions, chopped
- Salt and pepper to taste
- Water or chicken broth
Instructions
- Start by cooking the rice according to the package instructions, using water or chicken broth.
- Heat olive oil in a nonstick skillet over medium heat.
- Season each chicken breast with Cajun seasoning, salt, and pepper.
- Place the seasoned chicken in the hot skillet and cook for about 6-7 minutes on each side.
- Prepare the spicy mayo by mixing mayonnaise and Sriracha in a small bowl.
- Remove the chicken from the skillet and let it rest for a couple of minutes before slicing.
- Serve the sliced chicken over fluffy rice, drizzling with spicy mayo and garnishing with chopped green onions.
Notes
You can prepare the rice ahead of time for faster meal prep. Try using an air fryer for the chicken for a healthier option.
