Description

Delicious chicken rolls filled with a creamy herbed ricotta mixture, perfect for a family dinner or gathering.


Ingredients

  • 4 chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 1 tablespoon fresh herbs (such as basil, parsley, or thyme)
  • Salt and pepper to taste
  • Olive oil
  • Optional: Marinara sauce for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine ricotta cheese, mozzarella cheese, Parmesan cheese, chopped spinach, fresh herbs, salt, and pepper in a mixing bowl.
  3. Flatten each chicken breast using a meat mallet.
  4. Spoon the ricotta mixture onto each flattened chicken breast.
  5. Roll the chicken breasts tightly, securing ends if necessary with toothpicks.
  6. Brown each chicken roll in a skillet with olive oil for about 2-3 minutes on all sides.
  7. Transfer rolls to a baking dish and bake in the preheated oven for 25-30 minutes.
  8. Serve warm, optionally drizzled with marinara sauce.
