- 4 chicken breasts
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 cup fresh spinach, chopped
- 1 tablespoon fresh herbs (such as basil, parsley, or thyme)
- Salt and pepper to taste
- Olive oil
- Optional: Marinara sauce for serving
Instructions
- Preheat your oven to 375°F (190°C).
- Combine ricotta cheese, mozzarella cheese, Parmesan cheese, chopped spinach, fresh herbs, salt, and pepper in a mixing bowl.
- Flatten each chicken breast using a meat mallet.
- Spoon the ricotta mixture onto each flattened chicken breast.
- Roll the chicken breasts tightly, securing ends if necessary with toothpicks.
- Brown each chicken roll in a skillet with olive oil for about 2-3 minutes on all sides.
- Transfer rolls to a baking dish and bake in the preheated oven for 25-30 minutes.
- Serve warm, optionally drizzled with marinara sauce.
Notes
Make-ahead tips: Prepare the filling a day in advance. These rolls can also be cooked in an air fryer for a healthier option.
