- 4 thin chicken cutlets, boneless and skinless
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- ½ cup chicken broth
- 1 cup heavy cream
- ¼ cup grated Parmesan (for sauce)
- Salt & pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- Season the chicken cutlets with salt and pepper.
- Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan.
- Coat each cutlet in flour, dip it in the egg, then press it into the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat, then add the coated chicken.
- Cook for 3-4 minutes on each side until golden and crisp, then transfer to a paper towel-lined plate.
- Melt butter in the same skillet and sauté the minced garlic until fragrant.
- Add chicken broth and heavy cream, scraping up browned bits. Stir in extra Parmesan and simmer until thickened.
- Return chicken to the skillet and spoon sauce over it.
- Garnish with fresh parsley or thyme before serving.
Notes
Make-ahead chicken and sauce can be stored separately in the fridge for up to 3 days. Cooked chicken can be frozen for later use.
