Ingredients

  • 4 thin chicken cutlets, boneless and skinless
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¼ cup grated Parmesan (for sauce)
  • Salt & pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Season the chicken cutlets with salt and pepper.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan.
  3. Coat each cutlet in flour, dip it in the egg, then press it into the breadcrumb mixture.
  4. Heat olive oil in a skillet over medium heat, then add the coated chicken.
  5. Cook for 3-4 minutes on each side until golden and crisp, then transfer to a paper towel-lined plate.
  6. Melt butter in the same skillet and sauté the minced garlic until fragrant.
  7. Add chicken broth and heavy cream, scraping up browned bits. Stir in extra Parmesan and simmer until thickened.
  8. Return chicken to the skillet and spoon sauce over it.
  9. Garnish with fresh parsley or thyme before serving.

Notes

Make-ahead chicken and sauce can be stored separately in the fridge for up to 3 days. Cooked chicken can be frozen for later use.
