Description
Delightful banana pancakes that are fluffy, naturally sweetened, and perfect for a cozy breakfast or brunch.
Ingredients
Scale
- 2 ripe bananas
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup milk (whole, almond, or oat)
- 1 egg
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Prep your bananas: In a medium bowl, mash the ripe bananas with a fork until smooth, leaving a few small lumps for texture.
- Combine wet ingredients: In the same bowl, add milk, an egg, and vanilla extract, and whisk until well combined.
- Mix dry ingredients: In a separate bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
- Combine the mixtures: Gradually add the dry mix to the wet ingredients, stirring until just combined.
- Heat the skillet: Place your non-stick skillet over medium-low heat and let it warm for a few minutes.
- Cook the pancakes: Pour about 1/4 cup of batter for each pancake onto the skillet, cooking for 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
- Serve: Stack your pancakes on a plate and top with maple syrup, fresh fruit, or nuts as desired.
Notes
Make the batter ahead of time and store in the refrigerator. Use ripe bananas for the best flavor, and avoid over-mixing the batter.
