Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup cooked rice or quinoa
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 1 bell pepper, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt to taste

Instructions

  1. Marinate the chicken by combining olive oil, lemon juice, oregano, salt, and pepper in a bowl. Add the chicken breasts and coat thoroughly. Marinate for at least 30 minutes.
  2. Grill the chicken on medium heat for about 6-7 minutes per side until it reaches 165°F. Let it rest, then slice into strips.
  3. Prepare the tzatziki by mixing Greek yogurt, minced garlic, dill, and a pinch of salt in a bowl.
  4. Assemble the bowls by starting with cooked rice or quinoa, layering with grilled chicken, cucumber, tomatoes, onion, bell pepper, feta, and olives.
  5. Drizzle the tzatziki sauce over the bowls and serve immediately.

Notes

For added flavor, marinate the chicken overnight. Feel free to customize the vegetables based on seasonal availability.
