- 2 boneless, skinless chicken breasts
- 1 cup cooked rice or quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red onion, thinly sliced
- 1 bell pepper, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon fresh dill, chopped
- Salt to taste
Instructions
- Marinate the chicken by combining olive oil, lemon juice, oregano, salt, and pepper in a bowl. Add the chicken breasts and coat thoroughly. Marinate for at least 30 minutes.
- Grill the chicken on medium heat for about 6-7 minutes per side until it reaches 165°F. Let it rest, then slice into strips.
- Prepare the tzatziki by mixing Greek yogurt, minced garlic, dill, and a pinch of salt in a bowl.
- Assemble the bowls by starting with cooked rice or quinoa, layering with grilled chicken, cucumber, tomatoes, onion, bell pepper, feta, and olives.
- Drizzle the tzatziki sauce over the bowls and serve immediately.
Notes
For added flavor, marinate the chicken overnight. Feel free to customize the vegetables based on seasonal availability.
