A refreshing and vibrant Grilled Chicken Salad loaded with colorful veggies and topped with a tangy balsamic vinaigrette.
Ingredients

- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 cups mixed greens (spinach, arugula, etc.)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 bell pepper, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled (optional)
- Balsamic vinaigrette or dressing of choice
Instructions
- Preheat the grill to medium-high heat.
- Prepare the chicken by brushing it lightly with olive oil and seasoning with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side or until fully cooked, with an internal temperature of 165°F (75°C).
- Combine the mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion in a large mixing bowl.
- Add the sliced grilled chicken on top of the salad.
- Sprinkle feta cheese over the top, if using.
- Dress the salad with balsamic vinaigrette and gently toss to combine.
- Serve immediately and enjoy!
Notes
For optimal flavor, marinate the chicken beforehand and allow resting time after grilling.
