Description

A refreshing and vibrant Grilled Chicken Salad loaded with colorful veggies and topped with a tangy balsamic vinaigrette.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens (spinach, arugula, etc.)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 bell pepper, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • Balsamic vinaigrette or dressing of choice

Instructions

  1. Preheat the grill to medium-high heat.
  2. Prepare the chicken by brushing it lightly with olive oil and seasoning with salt and pepper.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked, with an internal temperature of 165°F (75°C).
  4. Combine the mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion in a large mixing bowl.
  5. Add the sliced grilled chicken on top of the salad.
  6. Sprinkle feta cheese over the top, if using.
  7. Dress the salad with balsamic vinaigrette and gently toss to combine.
  8. Serve immediately and enjoy!

Notes

For optimal flavor, marinate the chicken beforehand and allow resting time after grilling.
