A delightful summer appetizer featuring juicy peaches, creamy whipped ricotta, and crispy toasted baguette.

Ingredients

Scale
  • 3 Fresh Peaches, diced
  • 1 cup Ricotta Cheese
  • 1 Baguette, sliced into 1/2 inch pieces
  • 2 tablespoons Honey
  • 2 tablespoons Balsamic Glaze
  • 1/4 cup Fresh Mint, chopped
  • 2 tablespoons Olive Oil
  • Salt, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the baguette and arrange the slices on a baking sheet. Brush with olive oil and sprinkle with salt and pepper.
  2. Toast the bread in the oven for 5-7 minutes, until golden and crispy.
  3. Whip the ricotta in a mixing bowl with honey and a pinch of salt until creamy.
  4. Prepare the peaches by tossing them with balsamic glaze and fresh mint.
  5. Assemble by spreading whipped ricotta on each slice of toasted baguette and topping with the peach mixture.
  6. Finish with a drizzle of honey and balsamic glaze, then serve immediately.

Notes

Use ripe peaches for best flavor and keep ricotta at room temperature for easier whipping.
