- 3 Fresh Peaches, diced
- 1 cup Ricotta Cheese
- 1 Baguette, sliced into 1/2 inch pieces
- 2 tablespoons Honey
- 2 tablespoons Balsamic Glaze
- 1/4 cup Fresh Mint, chopped
- 2 tablespoons Olive Oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C). Slice the baguette and arrange the slices on a baking sheet. Brush with olive oil and sprinkle with salt and pepper.
- Toast the bread in the oven for 5-7 minutes, until golden and crispy.
- Whip the ricotta in a mixing bowl with honey and a pinch of salt until creamy.
- Prepare the peaches by tossing them with balsamic glaze and fresh mint.
- Assemble by spreading whipped ricotta on each slice of toasted baguette and topping with the peach mixture.
- Finish with a drizzle of honey and balsamic glaze, then serve immediately.
Notes
Use ripe peaches for best flavor and keep ricotta at room temperature for easier whipping.
