Description
A creamy and spicy soup inspired by jalapeño poppers, served with crispy grilled cheese dippers.
Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 jalapeños, seeded and chopped
- 4 cups chicken or vegetable broth
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Bread for grilling
- Butter for grilling
- More cheddar cheese for the grilled cheese dippers
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic, sautéing until soft and fragrant, about 3-5 minutes.
- Toss in the chopped jalapeños and sauté for an additional 2-3 minutes.
- Pour in the broth and bring to a gentle simmer.
- Add the cream cheese and shredded cheddar, stirring until melted and smooth.
- Season with smoked paprika, salt, and pepper to taste.
- Butter the outside of your chosen bread and layer cheddar cheese in between slices.
- Grill on medium heat until golden brown on both sides.
- Serve soup hot in bowls and add grilled cheese dippers alongside.
Notes
For a smoother soup, consider blending at the end. Use gloves when handling jalapeños.
