Description

A creamy and spicy soup inspired by jalapeño poppers, served with crispy grilled cheese dippers.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 jalapeños, seeded and chopped
  • 4 cups chicken or vegetable broth
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Bread for grilling
  • Butter for grilling
  • More cheddar cheese for the grilled cheese dippers

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until soft and fragrant, about 3-5 minutes.
  3. Toss in the chopped jalapeños and sauté for an additional 2-3 minutes.
  4. Pour in the broth and bring to a gentle simmer.
  5. Add the cream cheese and shredded cheddar, stirring until melted and smooth.
  6. Season with smoked paprika, salt, and pepper to taste.
  7. Butter the outside of your chosen bread and layer cheddar cheese in between slices.
  8. Grill on medium heat until golden brown on both sides.
  9. Serve soup hot in bowls and add grilled cheese dippers alongside.

Notes

For a smoother soup, consider blending at the end. Use gloves when handling jalapeños.
